African Groundnut stew

Today, I want to present you one of my favorite meals. It goes well with a lot of dietary requirements as it is vegan, the only thing you are not allowed to have is a nut allergy.




Ingredients: serves 4

some vegetable oil
3 medium onions, chopped
2 yellow, orange or red peppers, chopped
4 cloves garlic, finely shopped or crushed
a small piece fresh ginger, peeled and grated
2-4 chillis, depend on how spicy you like it, de-seeded and finely chopped

0.5 l of water
2x400 g chopped tomatoes tins
3 medium size sweet potatoes, peeled and cut into small chunks
4 tbsp dried thyme
3 tsp ground cumin
1 tsp cinnamon
1 tsp sweet paprika
300g chunky peanut butter
150 g fresh or frozen spinach

I know, it sounds a lot but it isn't really that much in the end.

Instructions:
In a large saucepan, heat the oil, then add the onions, peppers, garlic, ginger and chilli. Cook for about 5 minutes, stirring regularily.

Pour in the water, the tomatoes, the spices and the sweet potatoes and simmer over medium heat for 25-30 min until the potatoes are tender. Stirr occasionally. If it becomes to thick, add more water. If it is still quite liquid at the end, don't worry.

Add the peanut butter and stir until completely blended. This should really thicken your stew. Then stir in the spinach and let it simmer gently until the spinach is cooked. This will only take a few minutes.

Remove from heat and serve.

I often eat it as it is but if you want to add some grain, I like it with couscous.

  1. Ohh, toll, das hat meine schwarzafrikanische Freundin auch für mich früher gekocht.

    Allerdings hat die Unmengen an rotem Pfeffer reintgetan *stöhn*.
